Upon arriving to Dublin, we headed straight to Pichet for lunch as we knew it might be our only chance of getting a meal here at this Michelin starred restaurant. I ordered the Crowe’s Pork with Butternut Squash Barley Risotto. The pork was cooked perfectly, but the barley risotto stole the show. It wasn’t rich and heavy with cream and cheese like typical risottos, but flavorful and light. It tasted like the barley was cooked in a butternut squash stock or puree, it was SO DELICIOUS!
